Abstract: Evaluates effects of castration on carcass yields and meat quality attributes, using 30 male reindeer (Rangifer tarandus tarandus) - 16 bulls (control treatment) and 14 steers (castrated males). Finds meat ultimate pH values (measured in striploin; LD) to be highest in two-year-old steers castrated at 13 months, indicating low muscle glycogen stores at slaughter. Also finds castration to affect fat content with three-year-old steers having higher fat content than bulls.
