Inorganic nutrients and contaminants in subsistence species of Alaska: linking wildlife and human health / Sara K. Moses, and 4 others.

Title: Inorganic nutrients and contaminants in subsistence species of Alaska: linking wildlife and human health / Sara K. Moses, and 4 others.
Author(s): Moses, Sara K.
Date: 2009.
In: International Journal of Circumpolar Health. (2009.), Vol. 68(1) (2009)
Abstract: Reports study to determine inorganic nutrient and contaminant concentrations in subsistence foods consumed by Alaska Natives, concentration changes related to common preparation methods, and basic risk-benefit ratios for these foods. Measures 11 essential and six non-essential elements in foods derived from spotted seals (Phoca largha) and sheefish (Stenodus leucichthys). Finds that preparation methods alter nutrient and contaminant concentrations; also that traditional foods provide many essential nutrients with very limited risk from contaminants.
