Abstract: Considers problem of meat with high pH values, as persistent quality defect in all meat species. Notes that high pH values in reindeer meat have been related to pre-slaughter handling stress and poor nutritional status of animals. Reports research showing that fatty acid composition of meat changes in response to diets and discusses availability of new feed mixtures which impart fat composition to meat similar to that obtained from natural pasture.
