Abstract: Evaluates 24 reindeer (Rangifer tarandus) carcasses from male and female animals purchased from Bering Sea Reindeer Products, Nunivak Island. Dissects and analyses meat. Finds that, due to management and environmental effects, pH values are high and meat is dark in colour; also that carcasses from adult males contains significantly lower levels of fat than carcasses from adult females.
