Abstract: Describes reindeer herder Nils Tonny Bransfjell, who started family firm Fjellvilt AS near Røros seven years ago, to improve quality of reindeer meat. After hard start, he now sells to hotels, mountain huts, wholesalers (at times) and direct to public, but not to chains, whose pricing policy is no help. He teaches cooks good practice. Tenderising is alpha and omega of quality, and deer must not stay long in slaughter corrals. Marrow bones, tongues and hearts are sold as delicacies, dried, smoked or salted.
