Abstract: 8 reindeer bulls aged 1.5 years and 6 similar Friesian bulls were compared for tenderness. Samples to determine calpain/calpastatin were taken from muscle within 1 h post mortem (pm) and at various times pm. pH and temperature were measured. Samples were tested for shear force, proteolytic enzyme activity, myofibrillar protein degradation, collagen content and heat solubility at chosen periods pm. Cathespin activity was measured for both species.
