Abstract: Text is working paper, contributing to project "Conditions for sustainable development in the Arctic" started in 1995. Problem discussed is that in much of Arctic imported low quality foods replaced high quality locally produced food. In Greenland, local informal markets continue and have pushed local agenda into commercial sector, despite influence of imported coffee and sugar, even bread. Traditional diet is social issue - filling and warm, yes, but comparable to having beer at pub in West. Country food is boon to Greenlanders' health and economy. Examples include case of poultry, well suited to Greenland soup, but decreasing after 1989.
