Abstract: Wheat has been cultivated for 10 000 years and is associated with God's gift, symbolic food, and also with power and economic speculation. Most modern crops are hexaploid Triticum aestivum var. aestivum, hybridised from three close species. Wheat is staple food for 35% of world. Because of climate, it could not be cultivated in Sweden until recently, so wheaten bread was kept for feasts.
