Abstract: Iced storage experiment was performed in August 1997. Cod was investigated daily for chemical, physical, sensory and macrobiological properties, and data was correlated with time in ice. Fischtester VI and RT freshness taster (electrical) readings, DMA-N (dimethylamine) and TMAO-N (trimethylamine oxide) content, graded according to EU quality scheme, sensory assessment of cooked fillet samples and cfu micro-organism count on skin proved to correlate best with time on ice. This good correlation allows, to some extent, to substitute sensory by analytical ones.
