Abstract: 30 bulls aged 1 1/2 years were subjected to different pre-slaughter treatments to study the effects on ultimate pH values, muscle glycogen content, blood metabolites and abdominal lesions. The results showed lassoing to be stressful and glycogen-depleting, while catching by hand had less effect. But both techniques expose deer to acute stress during capture and manual restraint, reflected by high plasma cortisol values. Frequency of abomasal lesions was highest in group subjected to prolonged selection procedure.
