| Abstract: | In autumn 1991 and 1992 research was carried out at some abattoirs in Finnmark and South Norway. Glycogen in muscles at slaughter continues to operate until used up. Meat is then contracted. Amount of contraction is least when temperature is 15°C, when animals are well treated before slaughter and when cooling afterwards is slow. Transport as such seems to make little difference. Inset summarises similar Swedish results. |
