Ultimate pH values in reindeer meat with particular regard to animal sex and age, muscle and transport distance / E. Wiklund, A. Andersson, G. Malmfors, K. Lundström, Ö. Danell.
Title: | Ultimate pH values in reindeer meat with particular regard to animal sex and age, muscle and transport distance / E. Wiklund, A. Andersson, G. Malmfors, K. Lundström, Ö. Danell. |
Author(s): | Wiklund, E. Andersson, A. Malmfors, G. Lundström, K. Danell, Ö. |
Date: | 1995. |
In: | Rangifer. (1995.), Vol. 15(2) (1995) |
Abstract: | 3400 carcasses from 12 herds were studied. Distribution and frequency of high pH values were studied in three muscles from bulls, cows and calves after short and long distance transport. Calves were more susceptible to stress than adults and depleted energy stores more readily. Long distance travel did affect cows. Condition and energy balance before transport seemed to determine ability to stand its stress. |
Notes: | Rangifer. Vol. 15(2) :47-54 (1995). |
Keywords: | 591.18 -- Nervous system. 599.735.3 -- Cervidae: Rangifer tarandus. H6 -- Zoology: mammals. (*3) -- Arctic regions. |
